VEGAN-ISH MAC + CHEESE RECIPE AND GIVEAWAY!!!

My friend and kitchen muse, Jessica Murnane, recently had her Vegan Mac + Cheese recipe published on Babble. Immediately upon seeing it I knew I wanted to give it a whirl and finally had the time to do so this past weekend. Having just received some nifty kitchen tools from Kuhn Rikon and Frieling the timing was perfecto. 


Sit back, relax, and watch as Macy and I take you on culinary adventure.



Step One.
Familirize yourself with Jessica Murnane and print off her Vegan Mac& Cheese recipe.



Step Two.
Per her instructions, "peel and chop the butternut squash into 1-2 inch cubes." 
This was the most arduous part of the process for me. 
It took me hours, HOURS I SAY!


Step Three
Chop broccoli (while the squash is roasting.)
Impressed that Macy can use a super sharp knife at the modest age of 2.5? 
Don't be. She's using the Kuhn Rikon children's knife




Step Four
Steam the broccoli.
I used my new Black Cube Fry Pan c/o Frieling and would recommend it accordingly.



Step Five
Cook the noodles. I didn't have brown rice noodles like Jess used but generic HEB noodles seemed to work just fine.


Step 6
Put the roasted squash, almond milk, mustard, and *yeast in food blender to make the sauce.
I didn't have any *nutritional yeast on hand. (Because who does?) I googled what I could use as a substitution and decided parmesan cheese was my best bet which is why I'm calling this is vegan-ish. Nutritional Yeast is now on my grocery list though (I didn't see that coming) so next time I make this I'll be ready to go.

Step 7
WAH-LAH!
While you can mix it up to make it more mac and cheese-esque, it's good as is is. 
Seriously, so so good.
