RECIPE TO TRY: SWEET POTATO A LA MEGAN

Despite blogging for over five years, I've posted recipes only twice on Greetings From Texas because, let's be real, I don't/can't cook. That's why 94.6% of my diet consists of "sweet potato a la Megan". The other reason being it's fucking delicious - I don't wanna eat anything else. 

 Welcome to your new breakfast, lunch, and dinner! 
Also suffices as a late night drunken snack. Or for you stoners out there - #munchies.

First Step: Make your hand the center/focus of the shot to show off your manicure!

Second step: Roast a sweet potato*. (I usually make three at a time.) The key here is to roast them on a piece of foil, because one, the ooey sweetness that will emerge from the holes you poked in the potato is a bitch to clean off the cookie sheet. And two, this is how I store them in the fridge. I remove the one I'm gonna eat and wrap the other two in the foil (once they've cooled) and put them in the fridge for my next meal.

*You have to roast them in the oven at 400 degrees so them become sweet. Use a fork to poke a bunch of holes in them. After an hour, the holes will began to leak and that's how you know its ready. The microwave won't work for this recipe. The potatoes become soft, but not sweet. That's not what we're going for here.

Third step: Peel the sweet potato.

Fourth step: Mash it up with a fork. 

Fifth step: Add a handful of raisins, sea salt, and almonds. I crush my almonds by putting them in a ziploc bag and pounding them with a wine bottle.

I have no idea on the nutritional information of the dish but it's hearty and filling and I don't feel fat after I eat it. It can't be that bad as its a processed food free meal! Plus, per Samantha in Sex in the City 2, yams are great for menopause and, wait for it, your sex drive!

  1. Ah, this looks delish! I had no idea roasting made them sweet. I always just micro and add almond butter. Can't wait to try this!
